1987–1997 · Green bean
Paulo André Posteral Garofallo was born in Osvaldo Cruz, São Paulo. He moved to Andradina in 1997. It became the place where he studied, made friends and built his life.
Andradina was not where Paulo was born. It was where he became himself.
2004–2005 · Turning point
At 17, he moved to Araçatuba to study Computer Science, working during the day and studying at night. He later pursued postgraduate studies in Business Management.
A barista course in 2005 changed his direction. What he wanted to build could fit inside a cup. He chose to return.
2006–2018 · Maillard
Café La Regence opened in Andradina in 2006. Thousands of days followed: pulling espresso, steaming milk, serving people, making mistakes, training a team and opening again the next morning.
Technology offered one path. Professional poker offered another. Coffee became his life’s work.
A business grows through small things done well, over and over.
2019–2022 · First crack
La Regence became a franchise in 2019. The pandemic brought closures and a new beginning in 2020. Its own roastery and barista school followed in 2022.
Paulo expanded his work as a roaster, educator, mentor and Q-Grader. Experience at the counter became the APA Method: Ambiente, Produto e Atendimento — environment, product and service.
2025–2026 · Beyond the counter
In 2025, he began sharing his work more actively on social media. Recipes and practical techniques reached people beyond the café.
The Computer Science student had never left. Caféria, Latte Flow and Bambu are projects created by Paulo, connecting people, learning and technology.
2026 · Honorary citizen of Andradina
As La Regence reaches two decades, Paulo receives the title of Honorary Citizen of Andradina, recognizing a life connected to the city since 1997.
Consistency remains the thread through every chapter.
Paulo Posteral is still building the story people will one day tell about him.
